Ingredients

  • ½ cup Butter (melted and cooled)
  • 2 Large Eggs
  • 1 (8.5 ounce) package Dry Corn Bread Mix
  • 1 15-ounces Whole Kernel Corn (drained)
  • 1 Creamed Corn (14.75 ounce can)
  • 1 cup Sour Cream

Directions

(Note from Valerie, she always makes a double batch.)

  1. Start by preheating the oven to 350 degrees, then spray an 8×8 baking dish with non-stick cooking spray.
  2. Next, in a medium bowl combine all ingredients. Pour and spread the Jiffy corn casserole mixture evenly into the prepared dish.
  3. Bake for 45 to 50 minutes or until the top is golden brown, and looks like the picture above.
